Chinese Roasted Pork Loin

2 Cloves of fresh garlic, minced

1/4 cup Soy Sauce

1/4 Cup Dry Sherry

1 Tablespoon Hoisin Sauce

1 Tablespoon Plum Sauce

1 Pork Loin (1 1/2 to 2 pounds)

Mix first five ingredients and pour into a covered container or a zip-lock bag.  Place pork loin in the marinade and refrigerate for twenty-four hours or at least overnight, turning often to marinade evenly.  When ready to cook, remove loin to a shallow roasting pan.  Save the marinade for basting.  Roast at 325° for one and one half  to one hour and forty-five minutes.  Makes four servings.
